Food preservation, food additives,
toxic substances. Laws and regulations related to food Processing industries,
biochemical and chemical changes involved in Processing of agricultural raw
materials to products (Tea, coffee, cocoa, spices, essential oils, cereals,
fruits, vegetables, dairy, meat and fish).
Process : A combination of lectures, tutorials
and factory visits.
Scheme of Evaluation : End of semester examination and
report based on factory visits.
